Roast pork rack with sweet potato wedges and pears

To make this dish at home by prescription from the author sheff would need: 3 tsp sea salt flakes, 3/4 tsp fennel seeds, crushed, 60ml olive oil, 1.2kg pork loin rack, rind scored, Ground black peppercorn , 6 pears, halved lengthways, 800g sweet potato, halved, cut into wedges, Sea salt flakes, extra, to serve , Ground black peppercorns, extra, to serve.

Ingredients:

  • 3 tsp sea salt flakes 
  • 3/4 tsp fennel seeds, crushed 
  • 60ml olive oil 
  • 1.2kg pork loin rack, rind scored 
  • Ground black peppercorn 
  • 6 pears, halved lengthways 
  • 800g sweet potato, halved, cut into wedges 
  • Sea salt flakes, extra, to serve 
  • Ground black peppercorns, extra, to serve 

Instructions

  1. Preheat oven to 200C. Combine salt, fennel and 2 tbs of oil in a bowl. Rub over pork. Season with pepper. Place pork in a roasting pan. Roast for 25 minutes. Reduce oven to 160C. Roast for 10 minutes. Spray pear with oil. Add to the roasting pan. Roast for 20-25 minutes or until pork is cooked through and pear is tender. Transfer pork and pear to a plate. Cover with foil. Rest for 10 minutes.
  2. Meanwhile,place sweet potato on a baking tray. Drizzle with remaining oil. Roast for 40-45 minutes or until golden.
  3. Serve the pork with the pear and sweet potato. Season with extra salt and pepper.
