Roast pork rack with sweet potato wedges and pears

This roast pork is made even better with crunchy salt flakes and fennel.

To make this dish at home by prescription from the author sheff would need: 3 tsp sea salt flakes, 3/4 tsp fennel seeds, crushed, 60ml olive oil, 1.2kg pork loin rack, rind scored, Ground black peppercorn , 6 pears, halved lengthways, 800g sweet potato, halved, cut into wedges, Sea salt flakes, extra, to serve , Ground black peppercorns, extra, to serve.
Ingredients:
- 3 tsp sea salt flakes
- 3/4 tsp fennel seeds, crushed
- 60ml olive oil
- 1.2kg pork loin rack, rind scored
- Ground black peppercorn
- 6 pears, halved lengthways
- 800g sweet potato, halved, cut into wedges
- Sea salt flakes, extra, to serve
- Ground black peppercorns, extra, to serve
Instructions
- Preheat oven to 200C. Combine salt, fennel and 2 tbs of oil in a bowl. Rub over pork. Season with pepper. Place pork in a roasting pan. Roast for 25 minutes. Reduce oven to 160C. Roast for 10 minutes. Spray pear with oil. Add to the roasting pan. Roast for 20-25 minutes or until pork is cooked through and pear is tender. Transfer pork and pear to a plate. Cover with foil. Rest for 10 minutes.
- Meanwhile,place sweet potato on a baking tray. Drizzle with remaining oil. Roast for 40-45 minutes or until golden.
- Serve the pork with the pear and sweet potato. Season with extra salt and pepper.
