Spice-rubbed pork tacos with tomato salsa

To make this dish at home by prescription from the author sheff would need: 1 x 250g punnet cherry tomatoes, quartered, 1 tbsp chopped fresh coriander, 1 tbsp fresh lime juice, Pinch of sugar, 2 tsp ground cumin , 2 tsp ground paprika, 500g pork leg steaks, thinly sliced across the grain, 1 tbsp olive oil , 1 large red onion, halved, cut into thin wedges, 1 red capsicum, deseeded, thinly sliced, 12 taco shells, Shredded iceberg lettuce, to serve.
Ingredients:
- 1 x 250g punnet cherry tomatoes, quartered
- 1 tbsp chopped fresh coriander
- 1 tbsp fresh lime juice
- Pinch of sugar
- 2 tsp ground cumin
- 2 tsp ground paprika
- 500g pork leg steaks, thinly sliced across the grain
- 1 tbsp olive oil
- 1 large red onion, halved, cut into thin wedges
- 1 red capsicum, deseeded, thinly sliced
- 12 taco shells
- Shredded iceberg lettuce, to serve
Instructions
- Combine the tomato, coriander and lime juice in a small bowl. Add the sugar and season with salt and pepper.
- Combine the cumin and paprika in a glass or ceramic dish. Add the pork and stir to coat. Heat half the oil in a large non-stick frying pan over high heat. Add half the pork and stir-fry for 3 minutes or until golden. Transfer to a plate. Repeat with the remaining pork, reheating the pan between batches.
- Heat the remaining oil in the frying pan over medium heat. Add the onion and stir-fry for 3 minutes or until onion softens slightly. Add the capsicum and stir-fry for 2 minutes or until the capsicum is just tender. Add the pork and stir-fry for a further 1-2 minutes or until the pork is heated through.
- Heat the taco shells following packet directions. Divide the lettuce and the pork mixture among the taco shells. Spoon a little of the tomato mixture over each taco. Serve with the remaining tomato mixture.
