Lime & chilli pork with snow pea & asparagus salad

To make this dish at home by prescription from the author sheff would need: 4 pork loin cutlets, French trimmed, 2 tsp McCormick's Lime & Chili seasoning, Olive oil spray, 200g snow peas, topped, halved diagonally, 1 bunch asparagus, woody ends trimmed, cut into 4cm lengths diagonally , 1 Lebanese cucumber, halved, thinly sliced diagonally, 1 cup fresh coriander leaves, 1 tbsp fresh lime juice , 1 tbsp fresh orange juice, 1 tbsp rice wine vinegar, 2 tsp honey.
Ingredients:
- 4 pork loin cutlets, French trimmed
- 2 tsp McCormick's Lime & Chili seasoning
- Olive oil spray
- 200g snow peas, topped, halved diagonally
- 1 bunch asparagus, woody ends trimmed, cut into 4cm lengths diagonally
- 1 Lebanese cucumber, halved, thinly sliced diagonally
- 1 cup fresh coriander leaves
- 1 tbsp fresh lime juice
- 1 tbsp fresh orange juice
- 1 tbsp rice wine vinegar
- 2 tsp honey
Instructions
- Sprinkle both sides of the pork with the seasoning. Heat a non-stick frying pan over medium heat. Spray with olive oil spray to lightly grease. Add the pork and cook for 4-5 minutes each side for medium or until cooked to your liking. Transfer to a plate and cover loosely with foil. Set aside for 2-3 minutes to rest.
- Meanwhile, cook the snow peas and asparagus in a saucepan of boiling water for 1-2 minutes or until bright green and tender crisp. Refresh under cold running water. Drain. Combine the snow pea mixture, cucumber and coriander in a bowl.
- Whisk together the lime juice, orange juice, vinegar and honey in a small bowl. Season with pepper. Divide the pork and salad among serving dishes. Drizzle over the dressing to serve.
