To make this dish at home by prescription from the author sheff would need: 4 pork loin medallions, Salt & freshly ground pepper, 1/3 cup sesame seeds, 1 tbsp olive oil, 1 large avocado or 2 small avocados , 100g baby Asian salad, 2 Lebanese cucumbers, thinly sliced, 2 tbsp fresh lime juice , 1 tsp finely grated fresh ginger, 1 tsp sesame oil, 1/2 tsp soy sauce, 1/2 tsp honey.

Ingredients:

  • 4 pork loin medallions 
  • Salt & freshly ground pepper 
  • 1/3 cup sesame seeds 
  • 1 tbsp olive oil 
  • 1 large avocado or 2 small avocados 
  • 100g baby Asian salad 
  • 2 Lebanese cucumbers, thinly sliced 
  • 2 tbsp fresh lime juice 
  • 1 tsp finely grated fresh ginger 
  • 1 tsp sesame oil 
  • 1/2 tsp soy sauce 
  • 1/2 tsp honey 

Instructions

  1. For dressing, place ingredients in a bowl and whisk until well combined.
  2. Season the pork with salt & pepper, then coat both sides of the medallions with the sesame seeds.
  3. Heat the oil in a frying pan over medium heat. Cook the pork for 2 mins each side. Cover with foil and set aside to rest for 2 mins.
  4. Peel the avocado and chop the flesh. Toss the salad leaves and cucumber together. Divide between plates and scatter with the avocado. Arrange the pork on top of the salads. Drizzle with dressing and serve.
