Honey and balsamic pork chops with pineapple salsa

To make this dish at home by prescription from the author sheff would need: 1 tbsp honey, 1 tbsp balsamic vinegar, 1 tbsp light soy sauce, 2 garlic cloves, crushed, 4 x 200g Coles Australian pork loin chops , 1 tbsp peanut oil, 1/2 pineapple, cut into 1cm pieces, 1/4 cup mint leaves , 1 long red chilli, seeded, cut into thin strips, 1/2 small red onion, finely chopped, 1 tbsp lime juice, 1 tsp peanut oil, extra, Steamed long-grain rice, to serve, Lime wedges, to serve.

Ingredients:

  • 1 tbsp honey 
  • 1 tbsp balsamic vinegar 
  • 1 tbsp light soy sauce 
  • 2 garlic cloves, crushed 
  • 4 x 200g Coles Australian pork loin chops 
  • 1 tbsp peanut oil 
  • 1/2 pineapple, cut into 1cm pieces 
  • 1/4 cup mint leaves 
  • 1 long red chilli, seeded, cut into thin strips 
  • 1/2 small red onion, finely chopped 
  • 1 tbsp lime juice 
  • 1 tsp peanut oil, extra 
  • Steamed long-grain rice, to serve 
  • Lime wedges, to serve 

Instructions

  1. Combine honey, vinegar, soy and garlic in a large bowl. Add pork and turn to coat.
  2. Heat oil in large frying pan on medium heat. Add pork and cook for 3 mins each side or until cooked through. Transfer to a plate. Rest for 5 mins.
  3. Combine pineapple, mint, chilli, onion, lime juice and peanut oil in a medium bowl. Season with salt and pepper. Serve pork with steamed rice, pineapple salsa and lime wedges.
