Ingredients:
- 200g smoked salmon
- 120g creme fraiche
- 100g European-style butter, at room temperature
- 6 sage leaves
Instructions
- Place smoked salmon in the bowl of a food processor and process for 1 minute or until finely chopped. Add creme fraiche and process until just combined. Add 75g of the butter and process until just combined. Taste and season with salt and pepper.
- Melt remaining butter in a small saucepan over high heat until foaming and nutty in colour. Add sage leaves and remove from heat.
- Spoon pate among two 1/2 cup (125ml) capacity serving dishes. Decorate with fried sage leaves and drizzle with a little butter. Serve with epi loaves (see related recipe).
