Brown sugar-glazed pork with warm potato salad

To make this dish at home by prescription from the author sheff would need: 1/3 cup brown sugar, 1/4 tsp chilli flakes, 2 tsp smoked paprika, 1/2 tsp ground cinnamon, 1/2 cup olive oil , 8 Coles Australian pork sirloin steaks, 2 x 400g Coles Australian baby potatoes with butter and parsley, 3 middle bacon rashers, coarsely chopped , 3 spring onions, thinly sliced, 1/4 cup ranch dressing, Steamed green beans, to serve.

Ingredients:

  • 1/3 cup brown sugar 
  • 1/4 tsp chilli flakes 
  • 2 tsp smoked paprika 
  • 1/2 tsp ground cinnamon 
  • 1/2 cup olive oil 
  • 8 Coles Australian pork sirloin steaks 
  • 2 x 400g Coles Australian baby potatoes with butter and parsley 
  • 3 middle bacon rashers, coarsely chopped 
  • 3 spring onions, thinly sliced 
  • 1/4 cup ranch dressing 
  • Steamed green beans, to serve 

Instructions

  1. Combine sugar, chilli, smoked paprika, cinnamon and oil in a small bowl. Season with salt and pepper. Place pork in a large glass or ceramic dish. Pour over the marinade and toss to coat. Set aside for 10 mins.
  2. Meanwhile, cook potatoes as per packet instructions. Cool for 10 mins. Halve potatoes.
  3. Meanwhile, Heat a non-stick pan over medium heat. Cook bacon for 5 mins or until browned and crisp. Add onion and cook for 1-2 mins. Remove from heat. Place potatoes in a large bowl. Add bacon mixture and Ranch dressing. Season with salt and pepper. Toss to combine.
  4. Heat a barbecue or chargrill over medium heat. Cook steaks in batches for 3 mins each side or until cooked to your liking. Serve steaks with potato salad and steamed green beans.
