Grilled ginger pork sausages and cabbage salad

To make this dish at home by prescription from the author sheff would need: 600g pork mince, 2cm piece fresh ginger, grated, olive oil cooking spray, 225g can pineapple rings, drained, halved, 2 cups shredded green cabbage , 1/2 small red onion, finely chopped, 1/2 cup marinated red capsicum strips, 2 tbsp mayonnaise , 4 pita breads, warmed, quartered.

Ingredients:

  • 600g pork mince 
  • 2cm piece fresh ginger, grated 
  • olive oil cooking spray 
  • 225g can pineapple rings, drained, halved 
  • 2 cups shredded green cabbage 
  • 1/2 small red onion, finely chopped 
  • 1/2 cup marinated red capsicum strips 
  • 2 tbsp mayonnaise 
  • 4 pita breads, warmed, quartered 

Instructions

  1. Place pork and ginger in a bowl. Season with salt and pepper. Using hands, mix to combine. Using 1/4 cup mixture at a time, shape mixture into eight 8cm-long sausages.
  2. Spray a barbecue plate or chargrill with oil. Cook sausages for 10 to 12 minutes, turning occasionally, or until cooked through. Add pineapple. Cook for 1 minute each side or until heated through.
  3. Meanwhile, place cabbage, onion, capsicum and mayonnaise in a bowl. Toss to combine. Serve sausages with cabbage mixture, pineapple and pita breads.
