To make this dish at home by prescription from the author sheff would need: 4 garlic cloves, crushed, 1 tbsp finely grated fresh ginger, 1 stalk lemongrass, white part only, finely chopped, 2 tbsp finely chopped coriander roots, 1/4 cup coconut milk , 1/4 cup fish sauce, 3 tsp sesame oil, 2 pork fillets , 1 baby wombok , finely shredded, 2 carrots, peeled, cut into matchsticks, 1 cup coriander leaves, 1 cup Vietnamese mint leaves, 1/2 cup roasted peanuts, coarsely chopped, 1 tbsp lime juice, 2 tsp brown sugar, 1 tbsp black sesame seeds.

Ingredients:

  • 4 garlic cloves, crushed 
  • 1 tbsp finely grated fresh ginger 
  • 1 stalk lemongrass, white part only, finely chopped 
  • 2 tbsp finely chopped coriander roots 
  • 1/4 cup coconut milk 
  • 1/4 cup fish sauce 
  • 3 tsp sesame oil 
  • 2 pork fillets 
  • 1 baby wombok , finely shredded 
  • 2 carrots, peeled, cut into matchsticks 
  • 1 cup coriander leaves 
  • 1 cup Vietnamese mint leaves 
  • 1/2 cup roasted peanuts, coarsely chopped 
  • 1 tbsp lime juice 
  • 2 tsp brown sugar 
  • 1 tbsp black sesame seeds 
  • 1 tbsp sesame seeds, toasted 
  • Steamed brown rice, to serve 

Instructions

  1. Combine the garlic, ginger, lemongrass, coriander root, coconut milk, 2 tablespoonfuls of the fish sauce and 2 teaspoonfuls of sesame oil in a large glass or ceramic bowl. Add the pork and turn to coat. Cover with plastic wrap and place in the fridge for 4 hours to marinate.
  2. Preheat oven to 180°C. Heat a large frying pan over high heat. Drain the pork from the marinade and add to the pan. Cook, turning occasionally, for 5 minutes or until brown all over. Transfer to an oven tray and roast in preheated oven for 10 minutes or until cooked to your liking. Remove from oven and cover with foil. Set aside for 10 minutes to rest.
  3. Meanwhile, combine the wombok, carrot, coriander, mint and peanuts in a large bowl. Whisk together the lime juice, sugar, remaining fish sauce and remaining sesame oil. Drizzle over the salad and gently toss to combine.
  4. Divide the salad among serving bowls. Thickly slice the pork and place on the salad. Sprinkle with black and white sesame seeds. Serve immediately with brown rice, if desired.
