Roasted cauliflower salad with pork cutlets

Ingredients:
- 450g cauliflower, cut into large florets
- 2 tsp dried chilli flakes
- 4 pork cutlets, French trimmed, excess fat removed
- 2 bunches English spinach
- 95g raisins
- 1/4 cup fresh oregano leaves
Instructions
- Preheat oven to 200C. Place the cauliflower in a roasting pan. Spray with olive oil. Sprinkle with chilli flakes. Season. Roast for 30 minutes or until slightly golden.
- Meanwhile, season both sides of the pork. Heat a non-stick frying pan over medium heat. Spray with olive oil. Cook pork for 4-5 minutes each side for medium or until cooked to your liking. Transfer to a plate. Cover and set aside for 5 minutes to rest.
- Toss the spinach in the frying pan over medium heat for 1 minute or until spinach just wilts. Season.
- Combine the cauliflower, raisins and oregano in a bowl. Divide the spinach and pork among plates. Top with cauliflower salad.
