This is one-pot cooking at its easiest. Sausages, onions and rice are a delicious combination in this budget-friendly dinner recipe.

To make this dish at home by prescription from the author Gomer would need: 2 cups SunRice Medium Grain Brown Rice, 480g beef sausages or pork sausages, 2 tbsp vegetable oil, 2 onions, sliced, 1 small red capsicum, cut into strips , 1 can tomatoes, chopped, 5 cups Massel chicken style liquid stock .

Ingredients:

  • 2 cups SunRice Medium Grain Brown Rice 
  • 480g beef sausages or pork sausages 
  • 2 tbsp vegetable oil 
  • 2 onions, sliced 
  • 1 small red capsicum, cut into strips 
  • 1 can tomatoes, chopped 
  • 5 cups Massel chicken style liquid stock 

Instructions

  1. In a saucepan heat the oil, add sausages and cook until browned and just cooked.
  2. Remove sausages from pan, place onto a chopping board, allow to cool, slice thickly.
  3. Add onions and capsicum to the saucepan, cook for a few minutes until soft while stirring occasionally.
  4. Add rice, tomatoes, stock and sausages, stir and bring to the boil.
  5. Cover pan with a lid and simmer on low heat until rice is just tender.
  6. Season with salt and pepper, stir and serve.
