Ingredients:

  • 1.2kg potatoes , cut into chunks 
  • 1/3 cup walnut oil*, plus extra to drizzle 
  • 1/4 cup Massel chicken style liquid stock 
  • 1/2 cup thin cream 
  • 50g unsalted butter 

Instructions

  1. Place the potatoes into a pan of cold water, bring to the boil, then reduce heat and simmer for 15 minutes or until potatoes are tender. Drain, then mash the potatoes with walnut oil and chicken stock.
  2. Place the cream and butter in a large saucepan over medium heat until hot, then start adding potato, beating with a wooden spoon to combine. Continue until all potato is added and mash is smooth and creamy. Season to taste, drizzle with extra walnut oil and serve with salmon (see related recipe).
