To make this dish at home by prescription from the author Gomer would need: 2 tsp olive oil, 500g Heart Smart diced pork, 5 tbsp green curry paste, 1 cup Taste of Thai light coconut milk, 1/2 cup Massel salt reduced chicken style liquid stock , 700g pumpkin, peeled, deseeded, cut into 2cm pieces, 250g green beans, trimmed, cut into 4cm pieces, Juice of 1 lime , 1 1/3 cups jasmine rice, Fresh coriander leaves & lime wedges, to serve.

Ingredients:

  • 2 tsp olive oil 
  • 500g Heart Smart diced pork 
  • 5 tbsp green curry paste 
  • 1 cup Taste of Thai light coconut milk 
  • 1/2 cup Massel salt reduced chicken style liquid stock 
  • 700g pumpkin, peeled, deseeded, cut into 2cm pieces 
  • 250g green beans, trimmed, cut into 4cm pieces 
  • Juice of 1 lime 
  • 1 1/3 cups jasmine rice 
  • Fresh coriander leaves & lime wedges, to serve 

Instructions

  1. Heat oil in a large non-stick frying pan over a medium-high heat. Add pork and cook for 2 minutes or until browned. Remove from pan.
  2. Add curry paste to pan and cook, stirring, for 1 minute. Stir in coconut milk and stock. Bring to a simmer and add pumpkin. Cook, partially covered, for 10 minutes. Add pork and cook, uncovered, for a further 5 minutes. Add beans and cook for 5 minutes or until vegetables and pork are tender. Stir in lime juice.
  3. Meanwhile, cook rice following packet instructions for absorption method.
  4. Divide rice and curry among plates. Top with coriander and lime wedges.
