Marmalade-glazed pork with mash

To make this dish at home by prescription from the author Gomer would need: 800g desiree potatoes , cut into equal-sized pieces, 1 tbsp olive oil, 800g pork fillet, trimmed, cut into 8 medallions, 1/3 cup milk warmed, 50g unsalted butter , 2 handfuls wild rocket, to serve, 1 cup Campbell's Real Stock Chicken, 1/4 cup orange marmalade , 2 tsp balsamic vinegar, 1 tsp brown sugar.
Ingredients:
- 800g desiree potatoes , cut into equal-sized pieces
- 1 tbsp olive oil
- 800g pork fillet, trimmed, cut into 8 medallions
- 1/3 cup milk warmed
- 50g unsalted butter
- 2 handfuls wild rocket, to serve
- 1 cup Campbell's Real Stock Chicken
- 1/4 cup orange marmalade
- 2 tsp balsamic vinegar
- 1 tsp brown sugar
Instructions
- Preheat the oven to 200°C. Whisk glaze ingredients together, then set aside.
- Place the potatoes in a saucepan and cover with salted water. Bring to the boil, then cook over medium heat for 15-20 minutes (depending on the size of potato pieces) until tender.
- Meanwhile, heat the oil in a large frypan over medium-high heat. Cook pork for about 3 minutes each side until browned. Transfer to a baking tray and place in the oven for about 10 minutes until cooked through.
- Reduce the stove to medium heat and add the glaze mixture to the frypan.
- Cook for about 5 minutes until thick enough to coat the back of a spoon.
- Drain the cooked potatoes and return to the heat for a minute to dry out. Mash potato (or pass through a ricer) and mix in the milk and butter, then season with salt and pepper. Place some mash and 2 pork medallions on each plate. Drizzle over glaze and serve with rocket.
