Marmalade-glazed pork with mash

To make this dish at home by prescription from the author Gomer would need: 800g desiree potatoes , cut into equal-sized pieces, 1 tbsp olive oil, 800g pork fillet, trimmed, cut into 8 medallions, 1/3 cup milk warmed, 50g unsalted butter , 2 handfuls wild rocket, to serve, 1 cup Campbell's Real Stock Chicken, 1/4 cup orange marmalade , 2 tsp balsamic vinegar, 1 tsp brown sugar.

Ingredients:

  • 800g desiree potatoes , cut into equal-sized pieces 
  • 1 tbsp olive oil 
  • 800g pork fillet, trimmed, cut into 8 medallions 
  • 1/3 cup milk warmed 
  • 50g unsalted butter 
  • 2 handfuls wild rocket, to serve 
  • 1 cup Campbell's Real Stock Chicken 
  • 1/4 cup orange marmalade 
  • 2 tsp balsamic vinegar 
  • 1 tsp brown sugar 

Instructions

  1. Preheat the oven to 200°C. Whisk glaze ingredients together, then set aside.
  2. Place the potatoes in a saucepan and cover with salted water. Bring to the boil, then cook over medium heat for 15-20 minutes (depending on the size of potato pieces) until tender.
  3. Meanwhile, heat the oil in a large frypan over medium-high heat. Cook pork for about 3 minutes each side until browned. Transfer to a baking tray and place in the oven for about 10 minutes until cooked through.
  4. Reduce the stove to medium heat and add the glaze mixture to the frypan.
  5. Cook for about 5 minutes until thick enough to coat the back of a spoon.
  6. Drain the cooked potatoes and return to the heat for a minute to dry out. Mash potato (or pass through a ricer) and mix in the milk and butter, then season with salt and pepper. Place some mash and 2 pork medallions on each plate. Drizzle over glaze and serve with rocket.
