Ingredients:
- 3 tsp olive oil
- 3 cameo apples, halved, cored, thinly sliced
- 3 tsp fresh thyme leaves
- 4 Heart Smart pork schnitzels
- 1/4 cup balsamic vinegar
- 1/2 cup Massel beef stock
- 1 bunch broccolini, ends trimmed
- Crusty bread, to serve
Instructions
- Heat 2 teaspoons of the oil in a large non-stick frying pan over a medium-high heat. Add the apple and thyme. Cook, turning often, for 5-6 minutes or until golden and just tender. Transfer to a plate.
- Heat the remaining oil in the pan over a medium-high heat. Add the pork and cook for 2 minutes each side or until just cooked through. Transfer to a plate and cover with foil to keep warm.
- Increase the heat to high. Add the balsamic and stock, and boil for 3-4 minutes or until reduces and thickens slightly.
- Meanwhile, microwave or steam the broccolini.
- Place the broccolini on serving plates. Top with the pork, apple and drizzle with the sauce. Serve with crusty bread.
