To make this dish at home by prescription from the author Gomer would need: 3 tsp olive oil, 3 cameo apples, halved, cored, thinly sliced, 3 tsp fresh thyme leaves, 4 Heart Smart pork schnitzels, 1/4 cup balsamic vinegar , 1/2 cup Massel beef stock, 1 bunch broccolini, ends trimmed, Crusty bread, to serve .

Ingredients:

  • 3 tsp olive oil 
  • 3 cameo apples, halved, cored, thinly sliced 
  • 3 tsp fresh thyme leaves 
  • 4 Heart Smart pork schnitzels 
  • 1/4 cup balsamic vinegar 
  • 1/2 cup Massel beef stock 
  • 1 bunch broccolini, ends trimmed 
  • Crusty bread, to serve 

Instructions

  1. Heat 2 teaspoons of the oil in a large non-stick frying pan over a medium-high heat. Add the apple and thyme. Cook, turning often, for 5-6 minutes or until golden and just tender. Transfer to a plate.
  2. Heat the remaining oil in the pan over a medium-high heat. Add the pork and cook for 2 minutes each side or until just cooked through. Transfer to a plate and cover with foil to keep warm.
  3. Increase the heat to high. Add the balsamic and stock, and boil for 3-4 minutes or until reduces and thickens slightly.
  4. Meanwhile, microwave or steam the broccolini.
  5. Place the broccolini on serving plates. Top with the pork, apple and drizzle with the sauce. Serve with crusty bread.
