Maple-glazed pork and pears

To make this dish at home by prescription from the author Gomer would need: 1 1/2 tbsp maple syrup, 1 tbsp balsamic vinegar, 1/4 tsp dried chilli flakes, 2 large Beurre Bosc pears, cored, cut into wedges, 450g pork fillet, fat trimmed , 2 tsp cold water, 1 bunch watercress, sprigs picked, 200g snow peas, trimmed, halved, blanched .

Ingredients:

  • 1 1/2 tbsp maple syrup 
  • 1 tbsp balsamic vinegar 
  • 1/4 tsp dried chilli flakes 
  • 2 large Beurre Bosc pears, cored, cut into wedges 
  • 450g pork fillet, fat trimmed 
  • 2 tsp cold water 
  • 1 bunch watercress, sprigs picked 
  • 200g snow peas, trimmed, halved, blanched 

Instructions

  1. Preheat oven to 180C. Combine maple syrup, vinegar and chilli in a bowl. Season. Brush pear with some maple syrup mixture.
  2. Heat an ovenproof non-stick frying pan over medium-high heat. Spray with olive oil. Cook pork, turning, for 3-4 minutes or until browned. Remove from heat. Pour over remaining maple syrup mixture and water. Cover with foil. Roast for 15 minutes for medium or until cooked to your liking. Rest.
  3. Meanwhile, heat a barbecue grill or chargrill on medium-high. Cook pear, turning, for 4 minutes or until charred. Transfer to a plate. Cover with foil to keep warm.
  4. Use tongs to transfer pork to a chopping board. Place the frying pan over medium heat. Bring pan juices to the boil. Simmer, stirring occasionally, for 2 minutes or until the mixture thickens. Thinly slice the pork.
  5. Combine watercress, snow peas, pear and pork on a platter. Top with pan juices.
