These campfire cookies are a distant cousin to s'mores - just as delicious and plenty of fun for kids and adults alike!

To make this dish at home by prescription from the author sheff would need: 175g butter, softened, 1/3 cup caster sugar, 1 teaspoon vanilla extract, 1 cup plain flour, 1/3 cup self-raising flour , 2 tbsp milk, 1/2 cup milk choc chips, 6 white marshmallows, halved horizontally , 1 tablespoon desiccated coconut, 100g dark chocolate, melted, to serve.

Ingredients:

  • 175g butter, softened 
  • 1/3 cup caster sugar 
  • 1 teaspoon vanilla extract 
  • 1 cup plain flour 
  • 1/3 cup self-raising flour 
  • 2 tbsp milk 
  • 1/2 cup milk choc chips 
  • 6 white marshmallows, halved horizontally 
  • 1 tablespoon desiccated coconut 
  • 100g dark chocolate, melted, to serve 

Instructions

  1. Preheat oven to 180C/160C fan-forced. Grease a 12-hole (1/3-cup-capacity) muffin pan.
  2. Using an electric mixer, beat butter, sugar and vanilla for 5 minutes or until light and fluffy. Add flours and milk. Beat on low speed until just combined. Stir in choc chips.
  3. Divide mixture evenly among holes of prepared pan, pressing with the back of a spoon to level. Bake for 20 minutes or until golden and just firm to the touch.
  4. Top each cookie with a marshmallow half. Sprinkle with coconut. Bake for a further 5 minutes or until marshmallow is melted and coconut is golden. Stand in pan for 10 minutes. Carefully transfer to a baking paper-lined wire rack to cool. Drizzle with chocolate and serve warm or cold.
