These campfire cookies are a distant cousin to s'mores - just as delicious and plenty of fun for kids and adults alike!

To make this dish at home by prescription from the author sheff would need: 175g butter, softened, 1/3 cup caster sugar, 1 teaspoon vanilla extract, 1 cup plain flour, 1/3 cup self-raising flour , 2 tbsp milk, 1/2 cup milk choc chips, 6 white marshmallows, halved horizontally , 1 tablespoon desiccated coconut, 100g dark chocolate, melted, to serve.
Ingredients:
- 175g butter, softened
- 1/3 cup caster sugar
- 1 teaspoon vanilla extract
- 1 cup plain flour
- 1/3 cup self-raising flour
- 2 tbsp milk
- 1/2 cup milk choc chips
- 6 white marshmallows, halved horizontally
- 1 tablespoon desiccated coconut
- 100g dark chocolate, melted, to serve
Instructions
- Preheat oven to 180C/160C fan-forced. Grease a 12-hole (1/3-cup-capacity) muffin pan.
- Using an electric mixer, beat butter, sugar and vanilla for 5 minutes or until light and fluffy. Add flours and milk. Beat on low speed until just combined. Stir in choc chips.
- Divide mixture evenly among holes of prepared pan, pressing with the back of a spoon to level. Bake for 20 minutes or until golden and just firm to the touch.
- Top each cookie with a marshmallow half. Sprinkle with coconut. Bake for a further 5 minutes or until marshmallow is melted and coconut is golden. Stand in pan for 10 minutes. Carefully transfer to a baking paper-lined wire rack to cool. Drizzle with chocolate and serve warm or cold.
