To make this dish at home by prescription from the author sheff would need: 1 1/3 cups wholemeal self-raising flour, 3/4 cup plain flour, 1 cup firmly-packed brown sugar, 2 tsp mixed spice, 3/4 cup rice bran oil , 3 Coles Australian Free Range Eggs, 2 tsp vanilla extract, 1/3 cup milk , 1 large carrot, grated, 1 Fuji apple, cored, grated, 1 large Fuji apple, extra, cut into thin wedges, 1 teaspoon cinnamon sugar.
Ingredients:
- 1 1/3 cups wholemeal self-raising flour
- 3/4 cup plain flour
- 1 cup firmly-packed brown sugar
- 2 tsp mixed spice
- 3/4 cup rice bran oil
- 3 Coles Australian Free Range Eggs
- 2 tsp vanilla extract
- 1/3 cup milk
- 1 large carrot, grated
- 1 Fuji apple, cored, grated
- 1 large Fuji apple, extra, cut into thin wedges
- 1 teaspoon cinnamon sugar
Instructions
- Preheat oven to 180C. Grease an 8-hole, 3/4cup (180ml) capacity mini loaf pan.
- Place the combined flours, brown sugar and mixed spice in a bowl. Stir to combine. Whisk the oil, eggs, vanilla and milk in a separate bowl. Stir in the carrot and grated apple. Pour the apple mixture into flour mixture and stir until just combined.
- Divide the cake batter among the prepared holes. Top with the apple wedges and sprinkle with cinnamon sugar. Bake for 30 mins or until a skewer inserted into the centre comes out clean. Stand in the pan for 5 mins before turning onto a wire rack to cool. Serve warm or at room temperature.
