Ingredients:

  • 1 1/3 cups wholemeal self-raising flour 
  • 3/4 cup plain flour 
  • 1 cup firmly-packed brown sugar 
  • 2 tsp mixed spice 
  • 3/4 cup rice bran oil 
  • 3 Coles Australian Free Range Eggs 
  • 2 tsp vanilla extract 
  • 1/3 cup milk 
  • 1 large carrot, grated 
  • 1 Fuji apple, cored, grated 
  • 1 large Fuji apple, extra, cut into thin wedges 
  • 1 teaspoon cinnamon sugar 

Instructions

  1. Preheat oven to 180C. Grease an 8-hole, 3/4cup (180ml) capacity mini loaf pan.
  2. Place the combined flours, brown sugar and mixed spice in a bowl. Stir to combine. Whisk the oil, eggs, vanilla and milk in a separate bowl. Stir in the carrot and grated apple. Pour the apple mixture into flour mixture and stir until just combined.
  3. Divide the cake batter among the prepared holes. Top with the apple wedges and sprinkle with cinnamon sugar. Bake for 30 mins or until a skewer inserted into the centre comes out clean. Stand in the pan for 5 mins before turning onto a wire rack to cool. Serve warm or at room temperature.
