I took my wife Jeannie to Poipu Beach, Kauai in 1985, a honeymoon 25 years late. Poipu is on the SE corner of Kauai. While raining everywhere else, Poipu is always sunny.   • 1/2 oz orgeat syrup 
  • 1/2 oz rock candy syrup 
  • 1 1/2 oz pineapple juice 
  • 1 1/2 oz orange juice, fresh 
  • 1 stick pineapple stick 
  • 1 maraschino cherry 

Instructions

  1. Shake all but 1/2 ounce of dark rum with half glass of shaved ice.
  2. Pour into cocktail glass. Top with 1/2 ounce of dark rum.
  3. Insert pineapple stick, topped with a cherry, topped with a little green cocktail umbrella
