Roasted capsicum and rocket pasta

Make your own spiced tomato sauce from scratch to serve over pasta. A delicious and hearty dish for vegetarians.

To make this dish at home by prescription from the author Gomer would need: 1 tbsp olive oil, 1 medium brown onion, finely chopped, 2 garlic cloves, crushed, 2 tbsp tomato paste, 2 x 400g cans diced tomatoes , 1/4 cup finely chopped fresh basil leaves, 120g thinly sliced roasted red capsicum, 2 tbsp rocket pesto , 80g baby rocket, Cooked spiral pasta, to serve.

Ingredients:

  • 1 tbsp olive oil 
  • 1 medium brown onion, finely chopped 
  • 2 garlic cloves, crushed 
  • 2 tbsp tomato paste 
  • 2 x 400g cans diced tomatoes 
  • 1/4 cup finely chopped fresh basil leaves 
  • 120g thinly sliced roasted red capsicum 
  • 2 tbsp rocket pesto 
  • 80g baby rocket 
  • Cooked spiral pasta, to serve 

Instructions

  1. Heat oil in a saucepan over medium heat. Add onion and garlic. Cook, stirring occasionally, for 5 minutes or until onion has softened.
  2. Add tomato paste, capsicum and pesto. Cook, stirring, for 1 minute. Add tomato. Bring to the boil. Reduce heat to low. Simmer for 10 to 15 minutes or until sauce has thickened slightly. Add basil. Stir to combine.
  3. Just before serving, add rocket to sauce. Toss to combine. Serve with spiral pasta.
