To make this dish at home by prescription from the author Gomer would need: 200g white rice, Pinch of salt, 1 large brown onion, halved, each half cut into 6 wedges, 1 large coliban potato, coarsely chopped, 1 swede, peeled, coarsely chopped , 1 parsnip, peeled, coarsely chopped, 250g cauliflower, cut into florets, 310ml hot water , 1 x 460g jar sizzle & stir rogan josh sauce, 1 x 250g pkt frozen chopped leaf spinach, thawed.

Ingredients:

  • 200g white rice 
  • Pinch of salt 
  • 1 large brown onion, halved, each half cut into 6 wedges 
  • 1 large coliban potato, coarsely chopped 
  • 1 swede, peeled, coarsely chopped 
  • 1 parsnip, peeled, coarsely chopped 
  • 250g cauliflower, cut into florets 
  • 310ml hot water 
  • 1 x 460g jar sizzle & stir rogan josh sauce 
  • 1 x 250g pkt frozen chopped leaf spinach, thawed 

Instructions

  1. Cook the rice in a large saucepan of salted boiling water following packet directions or until tender. Drain. Return to the pan. Season with salt. Cover to keep warm.
  2. Combine onion, potato, swede, parsnip, cauliflower and water in a saucepan over medium-high heat. Cook, covered, stirring occasionally, for 8-10 minutes or until vegetables are just tender.
  3. Add the spice paste and stir to combine. Add the spinach and the jar of sauce. Cook, covered, stirring occasionally, for 10-12 minutes or until vegetables are tender. Spoon curry among serving bowls and serve immediately with rice.
