To make this dish at home by prescription from the author Gomer would need: 200g white rice, Pinch of salt, 1 large brown onion, halved, each half cut into 6 wedges, 1 large coliban potato, coarsely chopped, 1 swede, peeled, coarsely chopped , 1 parsnip, peeled, coarsely chopped, 250g cauliflower, cut into florets, 310ml hot water , 1 x 460g jar sizzle & stir rogan josh sauce, 1 x 250g pkt frozen chopped leaf spinach, thawed.
Ingredients:
- 200g white rice
- Pinch of salt
- 1 large brown onion, halved, each half cut into 6 wedges
- 1 large coliban potato, coarsely chopped
- 1 swede, peeled, coarsely chopped
- 1 parsnip, peeled, coarsely chopped
- 250g cauliflower, cut into florets
- 310ml hot water
- 1 x 460g jar sizzle & stir rogan josh sauce
- 1 x 250g pkt frozen chopped leaf spinach, thawed
Instructions
- Cook the rice in a large saucepan of salted boiling water following packet directions or until tender. Drain. Return to the pan. Season with salt. Cover to keep warm.
- Combine onion, potato, swede, parsnip, cauliflower and water in a saucepan over medium-high heat. Cook, covered, stirring occasionally, for 8-10 minutes or until vegetables are just tender.
- Add the spice paste and stir to combine. Add the spinach and the jar of sauce. Cook, covered, stirring occasionally, for 10-12 minutes or until vegetables are tender. Spoon curry among serving bowls and serve immediately with rice.
