Zucchini, pea and mint fritters

These Zucchini fritters make great finger food for vegetarians.

To make this dish at home by prescription from the author Gomer would need: 3 zucchini, grated, 2 green onions, chopped, 1 cup frozen peas, 1/4 cup chopped fresh mint leaves, 3/4 cup plain flour , 2 eggs, lightly beaten, Vegetable oil, for shallow frying .

Ingredients:

  • 3 zucchini, grated 
  • 2 green onions, chopped 
  • 1 cup frozen peas 
  • 1/4 cup chopped fresh mint leaves 
  • 3/4 cup plain flour 
  • 2 eggs, lightly beaten 
  • Vegetable oil, for shallow frying 

Instructions

  1. Squeeze excess moisture from zucchini.
  2. Place zucchini, onion, peas, mint and flour in a large bowl. Add egg. Season with salt and pepper. Stir to combine.
  3. Add enough oil to a deep frying pan to come 5mm up side of pan. Heat over medium heat. Spoon 2 level tablespoons batter into pan, spreading slightly with a spatula. Repeat to make 4 rounds.
  4. Cook for 2 to 3 minutes each side or until golden and cooked through. Transfer to a plate lined with paper towel. Repeat with remaining mixture. Serve.
