Instructions
- Heat 1 tablespoon of oil in a small frying pan over medium-high heat. Add mushrooms. Cook, stirring occasionally, for 2 to 3 minutes or until just tender. Add lemon rind and stir to combine. Season with salt and pepper.
- Meanwhile, lightly grill or toast both sides of focaccia. Combine remaining oil and garlic. Brush over focaccia bases. Top with salad leaves, mushrooms, feta and focaccia tops. Serve.
