To make this dish at home by prescription from the author Gomer would need: 1 kumara , peeled, 1 red capsicum, 1.25kg Jap pumpkin, peeled, 2 potatoes, peeled, 2 tbsp olive oil , 1 tbsp Indian curry powder, 12 garlic cloves, 1/2 cup sunflower seeds , 400g fettuccine pasta, 1/3 cup coriander leaves, to serve, freshly grated parmesan, to serve.

Ingredients:

  • 1 kumara , peeled 
  • 1 red capsicum 
  • 1.25kg Jap pumpkin, peeled 
  • 2 potatoes, peeled 
  • 2 tbsp olive oil 
  • 1 tbsp Indian curry powder 
  • 12 garlic cloves 
  • 1/2 cup sunflower seeds 
  • 400g fettuccine pasta 
  • 1/3 cup coriander leaves, to serve 
  • freshly grated parmesan, to serve 

Instructions

  1. Preheat oven to 210°C. Grease a large roasting pan.
  2. Cut vegetables into 3cm cubes. Place into roasting pan. Drizzle with oil. Sprinkle with curry powder. Season with salt and pepper. Toss vegetables until well coated.
  3. Add garlic cloves (still in their skin) to pan. Roast for 30 minutes or until vegetables are tender. Place sunflower seeds onto a baking tray. Place into oven under vegetables. Roast for 10 minutes, or until seeds are toasted. Remove garlic.
  4. Meanwhile, cook pasta in a large saucepan of boiling salted water, following packet directions, until tender. Drain. Return to the saucepan.
  5. Add vegetables and sunflower seeds to pasta. Toss to combine. Arrange in bowls. Top with coriander. Serve with parmesan.
