The fresh flavours of cucumber and chilli are a perfect condiment to jazz up a traditional Indian side dish.

Ingredients:

  • 12 plain pappadums 
  • 1 Lebanese cucumber, finely chopped 
  • 1/4 small red onion, finely chopped 
  • 1 long red chilli, finely chopped 
  • 2 tbsp coriander, chopped 

Instructions

  1. Prepare pappadums in microwave following packet directions. Combine cucumber, onion, chilli and coriander in a bowl. Season.
  2. Serve the pappadums with the cucumber mixture, mango chutney and lime wedges.
