Spiced cauliflower tabouli

Try this twist on traditional tabouli using spiced cauliflower.

To make this dish at home by prescription from the author Gomer would need: 1 head cauliflower, cut into florets, 1 tsp smoked paprika, 1 tsp ground cumin, 2 bunches fresh continental parsley, leaves picked, 1 bunch fresh mint, leaves picked , 3 green shallots, thinly sliced, 3 radishes, thinly sliced, 2 tbsp fresh lemon juice , 1 tbsp extra virgin olive oil, 2 tbsp pomegranate seeds.

Ingredients:

  • 1 head cauliflower, cut into florets 
  • 1 tsp smoked paprika 
  • 1 tsp ground cumin 
  • 2 bunches fresh continental parsley, leaves picked 
  • 1 bunch fresh mint, leaves picked 
  • 3 green shallots, thinly sliced 
  • 3 radishes, thinly sliced 
  • 2 tbsp fresh lemon juice 
  • 1 tbsp extra virgin olive oil 
  • 2 tbsp pomegranate seeds 

Instructions

  1. Preheat oven to 200C/180C fan forced. Line 2 large baking trays with baking paper. In 2 batches, process the cauliflower in a food processor until chopped. Spread the cauliflower evenly over the prepared trays and sprinkle with the paprika and cumin. Lightly spray with olive oil.
  2. Bake the cauliflower for 10 minutes. Remove from oven and stir well. Spread to an even layer. Swap trays and bake for a further 10 minutes or until the cauliflower is golden and tender. Transfer to a large bowl. Set aside, stirring often, to cool completely.
  3. Add the parsley, mint, shallot, radish, lemon juice and oil to the cauliflower. Season. Toss to combine. Sprinkle with the pomegranate seeds.
