Spiced cauliflower tabouli

Try this twist on traditional tabouli using spiced cauliflower.

To make this dish at home by prescription from the author Gomer would need: 1 head cauliflower, cut into florets, 1 tsp smoked paprika, 1 tsp ground cumin, 2 bunches fresh continental parsley, leaves picked, 1 bunch fresh mint, leaves picked , 3 green shallots, thinly sliced, 3 radishes, thinly sliced, 2 tbsp fresh lemon juice , 1 tbsp extra virgin olive oil, 2 tbsp pomegranate seeds.
Ingredients:
- 1 head cauliflower, cut into florets
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 2 bunches fresh continental parsley, leaves picked
- 1 bunch fresh mint, leaves picked
- 3 green shallots, thinly sliced
- 3 radishes, thinly sliced
- 2 tbsp fresh lemon juice
- 1 tbsp extra virgin olive oil
- 2 tbsp pomegranate seeds
Instructions
- Preheat oven to 200C/180C fan forced. Line 2 large baking trays with baking paper. In 2 batches, process the cauliflower in a food processor until chopped. Spread the cauliflower evenly over the prepared trays and sprinkle with the paprika and cumin. Lightly spray with olive oil.
- Bake the cauliflower for 10 minutes. Remove from oven and stir well. Spread to an even layer. Swap trays and bake for a further 10 minutes or until the cauliflower is golden and tender. Transfer to a large bowl. Set aside, stirring often, to cool completely.
- Add the parsley, mint, shallot, radish, lemon juice and oil to the cauliflower. Season. Toss to combine. Sprinkle with the pomegranate seeds.
