To make this dish at home by prescription from the author Gomer would need: 2 cups fresh basil leaves, 2 cups baby spinach leaves, 185ml extra virgin olive oil, 125ml light olive oil, 1 large zucchini, halved lengthways, cut into 8 pieces , 180g haloumi, cut into 16 pieces, 16 grape tomatoes, Olive oil spray .
Ingredients:
- 2 cups fresh basil leaves
- 2 cups baby spinach leaves
- 185ml extra virgin olive oil
- 125ml light olive oil
- 1 large zucchini, halved lengthways, cut into 8 pieces
- 180g haloumi, cut into 16 pieces
- 16 grape tomatoes
- Olive oil spray
Instructions
- Cook the basil and spinach in a saucepan of boiling water for 30 seconds or until just wilted. Refresh under cold running water. Drain.
- Place the basil mixture and combined oils in the bowl of a food processor and process until smooth. Transfer to an airtight container and place in the fridge for 8 hours to develop the flavours.
- Preheat a barbecue grill on medium-high. Thread a piece of zucchini, haloumi and a tomato onto each skewer. Lightly spray with olive oil spray.
- Cook the skewers on the grill for 4 minutes each side or until golden brown and cooked through. Arrange skewers on a serving platter and serve immediately with the basil oil.
