Haloumi, zucchini and grape-tomato skewers with basil oil

Ingredients:

  • 2 cups fresh basil leaves 
  • 2 cups baby spinach leaves 
  • 185ml extra virgin olive oil 
  • 125ml light olive oil 
  • 1 large zucchini, halved lengthways, cut into 8 pieces 
  • 180g haloumi, cut into 16 pieces 
  • 16 grape tomatoes 
  • Olive oil spray 

Instructions

  1. Cook the basil and spinach in a saucepan of boiling water for 30 seconds or until just wilted. Refresh under cold running water. Drain.
  2. Place the basil mixture and combined oils in the bowl of a food processor and process until smooth. Transfer to an airtight container and place in the fridge for 8 hours to develop the flavours.
  3. Preheat a barbecue grill on medium-high. Thread a piece of zucchini, haloumi and a tomato onto each skewer. Lightly spray with olive oil spray.
  4. Cook the skewers on the grill for 4 minutes each side or until golden brown and cooked through. Arrange skewers on a serving platter and serve immediately with the basil oil.
