Onion tarte tatin

This vegetarian version of classic French tarte tatin is full of sweet caramelised onions.

Ingredients:
- 30g butter
- 1/4 cup caster sugar
- 2 tbsp white balsamic vinegar
- 2 medium white onions, cut into 5mm-thick rings
- 1 tbsp fresh thyme leaves
- 375g block frozen puff pastry, partially thawed
- Fresh thyme sprigs, to serve
Instructions
- Preheat oven to 220°C/200°C fan-forced.
- Melt butter and sugar together in a 22cm-round (base), flameproof frying pan over medium heat. Cook, without stirring, for 5 minutes or until starting to turn golden. Stir in vinegar. Cook for 2 minutes. Arrange onion slices, side by side, in a single layer, in pan. Cook for 2 minutes or until onion starts to soften. Sprinkle with thyme leaves.
- Meanwhile, on a lightly floured surface, roll pastry out until 3mm thick. Cut a 24cm round from pastry. Discard pastry scraps. Place pastry round over onion in pan, tucking in edge.
- Bake for 15 to 18 minutes or until the pastry is golden and puffed (cover loosely with foil if it is over-browning during cooking). Stand in pan for 2 minutes. Carefully turn out onto a plate. Serve sprinkled with thyme sprigs.
