Onion tarte tatin

This vegetarian version of classic French tarte tatin is full of sweet caramelised onions.

Ingredients:

  • 30g butter 
  • 1/4 cup caster sugar 
  • 2 tbsp white balsamic vinegar 
  • 2 medium white onions, cut into 5mm-thick rings 
  • 1 tbsp fresh thyme leaves 
  • 375g block frozen puff pastry, partially thawed 
  • Fresh thyme sprigs, to serve 

Instructions

  1. Preheat oven to 220°C/200°C fan-forced.
  2. Melt butter and sugar together in a 22cm-round (base), flameproof frying pan over medium heat. Cook, without stirring, for 5 minutes or until starting to turn golden. Stir in vinegar. Cook for 2 minutes. Arrange onion slices, side by side, in a single layer, in pan. Cook for 2 minutes or until onion starts to soften. Sprinkle with thyme leaves.
  3. Meanwhile, on a lightly floured surface, roll pastry out until 3mm thick. Cut a 24cm round from pastry. Discard pastry scraps. Place pastry round over onion in pan, tucking in edge.
  4. Bake for 15 to 18 minutes or until the pastry is golden and puffed (cover loosely with foil if it is over-browning during cooking). Stand in pan for 2 minutes. Carefully turn out onto a plate. Serve sprinkled with thyme sprigs.
