Profiterole wreath

Ingredients:

  • 500ml Pauls Premium Vanilla Custard 
  • 36 bought profiteroles 
  • 400ml water 
  • 3 cups sugar 
  • Silver cachous 

Instructions

  1. Place custard in a piping bag fitted with a 1cm nozzle. Pipe custard into profiteroles. Stir water and sugar in a saucepan over medium heat until the sugar dissolves. Cook, without stirring, for 8-10 minutes or until light golden. Place base of pan in a bowl of hot water. Insert a fork into bases of profiteroles and dip in toffee. Sprinkle with silver cachous. Arrange, in 2 layers, in a wreath shape on a platter. Dip backs of 2 forks into remaining toffee. Press backs of forks together and pull apart to make strands. Arrange on top of wreath. Place a candle in the centre.
