Ingredients:

  • 12 small potatoes, unpeeled 
  • 2 x 220g can baked beans in tomato sauce 
  • 1/2 cup low-fat grated cheddar cheese, to serve 
  • 2 tsp chopped parsley, to serve 

Instructions

  1. Preheat oven to 210°C. Place the potatoes on a baking tray lined with baking paper and cook for 25 minutes or until tender. Remove and set aside for 5 minutes.
  2. Meanwhile, heat the baked beans in a small saucepan or microwave oven.
  3. Cut a disc out of the top of each potato. Place on serving plates and spoon some baked beans into the cavity of each potato.
  4. Combine grated cheese with parsley Sprinkle over each potato. Serve immediately.
