- 12 small potatoes, unpeeled
- 2 x 220g can baked beans in tomato sauce
- 1/2 cup low-fat grated cheddar cheese, to serve
- 2 tsp chopped parsley, to serve
Instructions
- Preheat oven to 210°C. Place the potatoes on a baking tray lined with baking paper and cook for 25 minutes or until tender. Remove and set aside for 5 minutes.
- Meanwhile, heat the baked beans in a small saucepan or microwave oven.
- Cut a disc out of the top of each potato. Place on serving plates and spoon some baked beans into the cavity of each potato.
- Combine grated cheese with parsley Sprinkle over each potato. Serve immediately.
