To make this dish at home by prescription from the author Gomer would need: 160g wholemeal flour, 150g plain flour, 1 tsp salt, 250ml warm water, Plain flour, extra, to dust , 80ml ghee, melted .

Ingredients:

  • 160g wholemeal flour 
  • 150g plain flour 
  • 1 tsp salt 
  • 250ml warm water 
  • Plain flour, extra, to dust 
  • 80ml ghee, melted 

Instructions

  1. Sift the flours and salt into a large bowl. Make a well in the centre and add the water. Use a round-bladed knife in a cutting motion to stir until mixture just comes together, then use your hands to mix until a soft dough forms. Turn onto a lightly floured surface and knead for 5 minutes or until smooth and elastic. Place in a bowl and cover with plastic wrap. Set aside for 30 minutes to rest.
  2. Divide dough into 8 portions and cover with a clean tea towel. Use a lightly floured rolling pin to roll out 1 portion of dough to a 15cm disc. Brush with ghee and fold in half. Brush with ghee and fold in half again. Roll out dough to a 5mm-thick disc. Repeat with the remaining dough and ghee.
  3. Heat a heavy-based frying pan over medium-high heat. Place 2 portions of dough in pan and cook, pressing the edges with a metal spatula to make the bread puff. Cook for 3 minutes or until browned. Turn and cook for a further 3 minutes or until browned and puffed.
  4. Transfer parathas to a plate and cover loosely with foil to keep warm. Repeat with remaining dough portions.
  5. Serve parathas immediately.
