Wood-roasted garlic with soft cheese and bread

To make this dish at home by prescription from the author Gomer would need: 4 garlic bulbs, 4 thyme sprigs, 1/3 cup extra virgin olive oil, plus extra to serve, 250g soft fresh goat's cheese or ricotta, 1 loaf wood-fired bread, thickly sliced .
Ingredients:
- 4 garlic bulbs
- 4 thyme sprigs
- 1/3 cup extra virgin olive oil, plus extra to serve
- 250g soft fresh goat's cheese or ricotta
- 1 loaf wood-fired bread, thickly sliced
Instructions
- Using a sharp knife, cut the top off each garlic bulb to expose tops of the cloves. Don't remove the papery skin.
- Cut out 4 large squares of foil and place a garlic bulb and a sprig of thyme on each. Drizzle each with 1 tablespoon oil, season with salt and pepper, then wrap tightly. Place in the fire and roast for 30 minutes. Alternatively, place on a baking tray and roast in an oven preheated to 180°C for 35 minutes.
- To serve, peel away papery garlic skin, squeeze out the soft cloves, then mash. Spread garlic onto bread slice, top with cheese, season with pepper and drizzle with olive oil. Serve immediately.
