Cheddar and green chilli stuffed sweet potatoes

Ingredients:

  • 4 small orange sweet potatoes 
  • 2 tbsp olive oil 
  • 2 green onions, thinly sliced 
  • 1 long green chilli, finely chopped 
  • 1/2 cup finely grated cheddar 
  • Sour cream, to serve 

Instructions

  1. Preheat oven to 200C/180C fan-forced. Place potatoes on a baking tray. Drizzle with oil. Season with salt and pepper. Bake for 45 minutes or until tender. Set aside for 5 minutes to cool slightly. Increase oven temperature to 220C/200C fan-forced.
  2. Cut 1cm, horizontally, off tops of potatoes and discard. Holding 1 potato with a tea towel, scoop out centre flesh, leaving a 1cm border. Place flesh in a bowl. Repeat with remaining potatoes. Mash flesh with a fork. Season with salt and pepper. Stir in onion, chilli and ½ the cheddar. Spoon filling into potatoes. Sprinkle with remaining cheese.
  3. Return potatoes to baking tray. Bake for 8 to 10 minutes or until heated through. Serve with sour cream.
