Poached pears with chocolate crumble topping

  • 45g walnuts 
  • 1.5L water 
  • 215g caster sugar 
  • 4 large firm ripe pears, peeled, halved lengthways 
  • 6 chocolate wheaten biscuits 
  • 1 tsp finely grated orange rind 
  • Thickened cream, to serve 

Instructions

  1. Preheat oven to 180°C. Spread the walnuts over a baking tray. Bake in oven for 6 minutes or until toasted. Set aside to cool slightly. Coarsely chop.
  2. Meanwhile, place the water and sugar in a large saucepan over low heat and cook, stirring, for 5 minutes or until the sugar dissolves.
  3. Use a melon baller or small teaspoon to scoop out the core from each pear. Place the pears in the sugar mixture. Cover and bring to the boil over high heat. Reduce heat to low and simmer for 15 minutes or until the pears are tender.
  4. Place the biscuits in a sealable plastic bag. Use a rolling pin to gently pound until coarsely crushed. Combine the walnuts, biscuit and orange rind in a medium bowl.
  5. Arrange 2 pear halves, cut-side up, in each serving dish. Drizzle over cream. Sprinkle with biscuit mixture to serve.
