To make this dish at home by prescription from the author Gomer would need: 2 1/2 cups bread and pizza flour, 1 1/2 tsp instant dried yeast, 1 tbsp caster sugar, 2 tbsp chopped fresh chives, 1 tsp sea salt , 1 cup warm water, 2 tbsp olive oil, 1 bulb garlic , 1 tbsp milk, olive oil, to serve.

Ingredients:

  • 2 1/2 cups bread and pizza flour 
  • 1 1/2 tsp instant dried yeast 
  • 1 tbsp caster sugar 
  • 2 tbsp chopped fresh chives 
  • 1 tsp sea salt 
  • 1 cup warm water 
  • 2 tbsp olive oil 
  • 1 bulb garlic 
  • 1 tbsp milk 
  • olive oil, to serve 

Instructions

  1. Preheat oven to 220°C/200°C fan-forced. Line a baking tray with baking paper. Sift 2 cups flour into a bowl. Stir in yeast, sugar, chives and half the salt. Make a well in the centre. Add water and oil. Mix to form a soft dough. Turn out on to a lightly floured surface. Add remaining flour. Knead for 10 minutes or until smooth and elastic.
  2. Shape dough into a 10cm x 25cm oval. Place on prepared tray. Cover with lightly greased plastic wrap. Set aside in a warm place for 1 hour or until doubled in size.
  3. Meanwhile, wrap garlic in foil. Place wrapped garlic onto oven shelf. Roast for 30 minutes or until tender. Set aside to cool. Remove garlic cloves from skins. Discard skins. Reduce oven temperature to 200°C/180°C fan-forced.
  4. Press fingertips into dough to form indentations. Push garlic cloves into some of the indentations. Brush top with milk. Season with pepper. Sprinkle with remaining salt. Bake for 25 to 30 minutes or until golden. Stand on trays for 5 minutes. Transfer to a wire rack to cool. Serve.
