To make this dish at home by prescription from the author Gomer would need: 3 cups plain flour, 1 cup grated parmesan, 1 tsp sweet paprika, 180g butter, chilled, cubed, 1/2 cup chilled water , 1 egg, 1/2 cup olive tapenade, 750g cherry tomatoes, halved , 2 tbsp olive oil.
Ingredients:
- 3 cups plain flour
- 1 cup grated parmesan
- 1 tsp sweet paprika
- 180g butter, chilled, cubed
- 1/2 cup chilled water
- 1 egg
- 1/2 cup olive tapenade
- 750g cherry tomatoes, halved
- 2 tbsp olive oil
Instructions
- Process flour, parmesan, paprika and butter in a food processor to fine breadcrumbs. Add water and egg. Process until mixture comes together. Turn onto a lightly floured surface. Knead lightly.
- Divide pastry into 6 portions. Press each into a 10cm diameter disc. Wrap each in greaseproof paper. Refrigerate for 20 minutes.
- Preheat oven to 200°C. Line 2 baking trays with baking paper. Roll each pastry disc out to a 15cm diameter circle. Place onto baking trays, leaving room for spreading.
- Spread tapenade over pastry, leaving 4cm borders. Arrange tomatoes over tapenade. Fold pastry over, leaving half the tomatoes exposed. Brush pastry with oil. Drizzle remaining oil over tomatoes. Bake for 20 for 25 minutes or until crisp.
