To make this dish at home by prescription from the author Gomer would need: 1 1/2 cups strong brewed coffee, 2 tbsp Frangelico liqueur, optional*, 2 eggwhites, 1 cup trim custard, purchased, 350g low-fat fresh ricotta cheese , 1/4 cup icing sugar, sifted, 250g packet savoiardi biscuits, 2 tbsp cocoa powder, sifted .

Ingredients:

  • 1 1/2 cups strong brewed coffee 
  • 2 tbsp Frangelico liqueur, optional* 
  • 2 eggwhites 
  • 1 cup trim custard, purchased 
  • 350g low-fat fresh ricotta cheese 
  • 1/4 cup icing sugar, sifted 
  • 250g packet savoiardi biscuits 
  • 2 tbsp cocoa powder, sifted 

Instructions

  1. Combine coffee and liqueur (if using) in a shallow dish. Set aside to cool. Using an electric mixer, beat eggwhites in a small bowl to soft peaks.
  2. In a separate bowl, using the electric mixer, beat custard, ricotta and icing sugar until smooth and well combined. Fold through eggwhites.
  3. Dip half the biscuits, 1 at a time, into coffee mixture. Arrange in a single layer over the base of a 6cm deep, 18cm (base) square ceramic dish.
  4. Spread half the ricotta mixture over biscuits. Repeat with remaining biscuits, coffee mixture and ricotta mixture. Cover and refrigerate for at least 6 hours, or overnight if time permits. Dust with cocoa. Serve.
