Ingredients:

  • 2 tbsp olive oil 
  • 1 Spanish onion, skin on, cut into wedges 
  • 4 finger eggplants, thickly sliced 
  • 1 red capsicum, seeded and chopped 
  • 450g pumpkin, peeled and seeded 
  • 75g baby rocket 
  • store-bought hummus, to serve 

Instructions

  1. Preheat oven to 220°C. Line an oven tray with baking paper.
  2. Place the vegetables in a bowl and toss with oil, salt and pepper. Transfer to the oven tray and bake for 25 minutes or until vegetables are tender and golden. Remove from the oven and stand for 5 minutes.
  3. Serve the vegetables with rocket and a dollop of hummus.
