Barolo-poached figs

Ingredients:

  • 2 cups Barolo or other dry red wine 
  • 1 cinnamon quill 
  • 1/2 firmly packed cup brown sugar 
  • 6 figs, halved 
  • 1 tbsp 

Instructions

  1. Place wine, cinnamon and sugar in a pan over low heat. Stir to dissolve sugar, then simmer over medium heat for 10 minutes or until liquid is reduced by half.
  2. Add figs to the pan and simmer for 3 minutes until just softened. Remove figs and continue to simmer liquid for 3-4 minutes until thick and syrupy. Return the figs to pan and stir in the vinegar. Allow to cool, then serve with cheesecake.
