Barolo-poached figs

Theres no better way to appreciate a long Italian lunch than with this elegant starter.

Ingredients:
- 2 cups Barolo or other dry red wine
- 1 cinnamon quill
- 1/2 firmly packed cup brown sugar
- 6 figs, halved
- 1 tbsp
Instructions
- Place wine, cinnamon and sugar in a pan over low heat. Stir to dissolve sugar, then simmer over medium heat for 10 minutes or until liquid is reduced by half.
- Add figs to the pan and simmer for 3 minutes until just softened. Remove figs and continue to simmer liquid for 3-4 minutes until thick and syrupy. Return the figs to pan and stir in the vinegar. Allow to cool, then serve with cheesecake.
