To make this dish at home by prescription from the author Gomer would need: Melted butter, to grease, 200g butter, 1 firm ripe packham pear, peeled, cored, cut lengthways into 6 equal slices, 155g caster sugar, 2 eggs , 225g self-raising flour, 80ml milk, 1/2 tsp ground cinnamon , 20g butter, extra, melted, 2 tbsp demerara sugar, 1 whole nutmeg.
Ingredients:
- Melted butter, to grease
- 200g butter
- 1 firm ripe packham pear, peeled, cored, cut lengthways into 6 equal slices
- 155g caster sugar
- 2 eggs
- 225g self-raising flour
- 80ml milk
- 1/2 tsp ground cinnamon
- 20g butter, extra, melted
- 2 tbsp demerara sugar
- 1 whole nutmeg
Instructions
- Preheat oven to 180°C. Brush an 11 x 21cm (base measurement) loaf pan with melted butter to grease. Line the base and 2 opposite long sides with non-stick baking paper, allowing it to overhang. Melt 20g of the butter in a frying pan over medium heat until foaming. Add the pear slices and cook for 1 minute each side or until golden and almost tender. Remove from heat. Arrange pear slices over the base of prepared pan.
- Use an electric beater to beat together the remaining butter and sugar in a large bowl until pale and creamy. Add the eggs, 1 at a time, beating well after each addition until combined. Stir in the flour, milk and cinnamon until combined. Pour cake batter over pears in prepared pan. Bake in oven for 35-40 minutes or until a skewer inserted into the centre comes out clean. Remove from oven and turn, pear-side up, onto a wire rack over a baking tray. Set aside for 5 minutes to cool slightly.
- Brush the top of the cake with melted butter and sprinkle evenly with sugar. Use a spice grater to finely grate the nutmeg evenly over the top of the cake. Cut into slices to serve.
