To make this dish at home by prescription from the author Gomer would need: Melted butter, to grease, 200g butter, 1 firm ripe packham pear, peeled, cored, cut lengthways into 6 equal slices, 155g caster sugar, 2 eggs , 225g self-raising flour, 80ml milk, 1/2 tsp ground cinnamon , 20g butter, extra, melted, 2 tbsp demerara sugar, 1 whole nutmeg.

Ingredients:

  • Melted butter, to grease 
  • 200g butter 
  • 1 firm ripe packham pear, peeled, cored, cut lengthways into 6 equal slices 
  • 155g caster sugar 
  • 2 eggs 
  • 225g self-raising flour 
  • 80ml milk 
  • 1/2 tsp ground cinnamon 
  • 20g butter, extra, melted 
  • 2 tbsp demerara sugar 
  • 1 whole nutmeg 

Instructions

  1. Preheat oven to 180°C. Brush an 11 x 21cm (base measurement) loaf pan with melted butter to grease. Line the base and 2 opposite long sides with non-stick baking paper, allowing it to overhang. Melt 20g of the butter in a frying pan over medium heat until foaming. Add the pear slices and cook for 1 minute each side or until golden and almost tender. Remove from heat. Arrange pear slices over the base of prepared pan.
  2. Use an electric beater to beat together the remaining butter and sugar in a large bowl until pale and creamy. Add the eggs, 1 at a time, beating well after each addition until combined. Stir in the flour, milk and cinnamon until combined. Pour cake batter over pears in prepared pan. Bake in oven for 35-40 minutes or until a skewer inserted into the centre comes out clean. Remove from oven and turn, pear-side up, onto a wire rack over a baking tray. Set aside for 5 minutes to cool slightly.
  3. Brush the top of the cake with melted butter and sprinkle evenly with sugar. Use a spice grater to finely grate the nutmeg evenly over the top of the cake. Cut into slices to serve.
