These tasty bruschetta make a perfect light meal, starter or party food.

To make this dish at home by prescription from the author Gomer would need: 2 red capsicums, roasted, peeled, finely diced, 1/2 tbsp chopped rosemary leaves, plus extra to garnish, 1 tbsp olive oil, plus extra to drizzle, 4 slices ciabatta bread, 1 garlic clove, halved , 125g goat's cheese .

Ingredients:

  • 2 red capsicums, roasted, peeled, finely diced 
  • 1/2 tbsp chopped rosemary leaves, plus extra to garnish 
  • 1 tbsp olive oil, plus extra to drizzle 
  • 4 slices ciabatta bread 
  • 1 garlic clove, halved 
  • 125g goat's cheese 

Instructions

  1. Place the capsicum in a large bowl and add the rosemary and olive oil. Season with salt and pepper and toss to combine. Set aside.
  2. Place the ciabatta in the toaster and toast until golden. Rub ciabatta with the garlic and drizzle with a little extra olive oil.
  3. Spread the goat's cheese over the ciabatta and top with capsicum mixture. Serve immediately.
