These tasty bruschetta make a perfect light meal, starter or party food.

To make this dish at home by prescription from the author Gomer would need: 2 red capsicums, roasted, peeled, finely diced, 1/2 tbsp chopped rosemary leaves, plus extra to garnish, 1 tbsp olive oil, plus extra to drizzle, 4 slices ciabatta bread, 1 garlic clove, halved , 125g goat's cheese .
Ingredients:
- 2 red capsicums, roasted, peeled, finely diced
- 1/2 tbsp chopped rosemary leaves, plus extra to garnish
- 1 tbsp olive oil, plus extra to drizzle
- 4 slices ciabatta bread
- 1 garlic clove, halved
- 125g goat's cheese
Instructions
- Place the capsicum in a large bowl and add the rosemary and olive oil. Season with salt and pepper and toss to combine. Set aside.
- Place the ciabatta in the toaster and toast until golden. Rub ciabatta with the garlic and drizzle with a little extra olive oil.
- Spread the goat's cheese over the ciabatta and top with capsicum mixture. Serve immediately.
