Spicy beef and noodle salad

To make this dish at home by prescription from the author Gomer would need: 400g piece Coles beef eye fillet, 1/4 cup Coles sweet chilli sauce, 50g vermicelli noodles, 1 carrot, shredded, 1 bunch fresh mint, leaves picked , 1 bunch fresh coriander, leaves picked, 1 spring onions, sliced diagonally, 2 limes, finely grated zest and juice , 2 tbsp Coles soy sauce, 2 tbsp ginger, grated, 3 tsp white sugar, 2 tsp fish sauce, Lime wedges, to serve, Chilli flakes, to serve.
Ingredients:
- 400g piece Coles beef eye fillet
- 1/4 cup Coles sweet chilli sauce
- 50g vermicelli noodles
- 1 carrot, shredded
- 1 bunch fresh mint, leaves picked
- 1 bunch fresh coriander, leaves picked
- 1 spring onions, sliced diagonally
- 2 limes, finely grated zest and juice
- 2 tbsp Coles soy sauce
- 2 tbsp ginger, grated
- 3 tsp white sugar
- 2 tsp fish sauce
- Lime wedges, to serve
- Chilli flakes, to serve
Instructions
- Preheat oven to 200C or 180C fan. Heat an ovenproof frying pan on high. Cook beef, turning for 2-3 mins, or until seared all over. Transfer to oven and cook for 15 mins, for medium-rare, or until cooked to your liking. Pour sweet chilli sauce over beef, turning to coat. Cover loosely with foil and set aside to rest for 20 mins.
- Meanwhile, place noodles in a heatproof bowl. Cover with boiling water and soak, according to packet directions. Drain. Cut noodles into 6cm lengths.
- Thinly slice beef. Place noodles, carrot, mint, coriander, spring onions and lime zest in a large bowl. Mix together lime juice, soy, ginger, sugar, fish sauce and any pan juices from beef. Add to noodle mixture with sliced beef and toss to combine. Serve with lime wedges and top with chilli flakes, if using.
