To make this dish at home by prescription from the author Gomer would need: olive oil cooking spray, 500g cherry tomatoes, 400g Swiss brown mushrooms, quartered, 2 tbsp drained capers, 1 long red chilli, deseeded, thinly sliced , 80g mixed salad leaves, 2 tbsp olive oil, 1 garlic clove, crushed , 2 tbsp red wine vinegar, 1 tbsp chopped fresh basil leaves.

Ingredients:

  • olive oil cooking spray 
  • 500g cherry tomatoes 
  • 400g Swiss brown mushrooms, quartered 
  • 2 tbsp drained capers 
  • 1 long red chilli, deseeded, thinly sliced 
  • 80g mixed salad leaves 
  • 2 tbsp olive oil 
  • 1 garlic clove, crushed 
  • 2 tbsp red wine vinegar 
  • 1 tbsp chopped fresh basil leaves 

Instructions

  1. Spray a chargrill or barbecue plate with oil. Heat over high heat. Cook tomatoes, turning, for 5 minutes or until skins start to blister.
  2. Place tomatoes, mushroom, capers, chilli and salad leaves in a bowl.
  3. Place oil, garlic, vinegar and basil in a screw-top jar. Season with salt and pepper. Secure lid. Shake to combine. Pour over tomato mixture. Toss to combine. Serve.
