Ingredients:
- 500g bacon, rind removed, chopped
- 1 iceberg lettuce, thickly sliced
- 1 bunch shallots, sliced
- 500ml good-quality mayonnaise
- 100g caster sugar
- 500g frozen peas
- 350g grated cheddar cheese
Instructions
- Place the bacon in a frying pan over medium heat and fry, stirring, until crisp. Set aside on a plate lined with paper towel.
- Place the iceberg lettuce and shallots in a large bowl and set aside.
- Place the mayonnaise and sugar in a bowl and use an electric beater to beat until smooth. Pour over the lettuce.
- Place peas (still frozen) over mixture, then add the blue cheese and finally the bacon. Cover with plastic wrap and set aside overnight.
- When ready to serve, season the salad well with salt and freshly ground black pepper and toss together to combine.
- Serve as part of a buffet.
