To make this dish at home by prescription from the author Gomer would need: 1 tbsp olive oil, 350g Coles RSPCA Approved Chicken Breast Fillet, 1/2 loaf Coles Bakery Pane Di Casa loaf, halved, cut into 1cm slices, Olive oil spray, 2 bacon rashers, coarsely chopped , 1 cos lettuce, outer leaves removed, 1 avocado, stoned, peeled, sliced, 2 tomatoes, sliced , 1/3 cup Coles Australian Shredded Tasty Cheese, 1/3 cup Caesar salad dressing.

Ingredients:

  • 1 tbsp olive oil 
  • 350g Coles RSPCA Approved Chicken Breast Fillet 
  • 1/2 loaf Coles Bakery Pane Di Casa loaf, halved, cut into 1cm slices 
  • Olive oil spray 
  • 2 bacon rashers, coarsely chopped 
  • 1 cos lettuce, outer leaves removed 
  • 1 avocado, stoned, peeled, sliced 
  • 2 tomatoes, sliced 
  • 1/3 cup Coles Australian Shredded Tasty Cheese 
  • 1/3 cup Caesar salad dressing 

Instructions

  1. Heat an oiled chargrill pan over medium-low heat. Cook the chicken for 5 mins each side or until cooked through. Transfer to a plate and cover to keep warm. Thinly slice.
  2. Spray the bread with oil spray. Cook on the chargrill pan for 1-2 mins each side or until toasted.
  3. Meanwhile, cook the bacon in a small frying pan over high heat, stirring, for 4 mins or until browned. Place on a plate lined with paper towel to drain.
  4. Arrange the lettuce, bread, chicken, avocado and tomato on serving plates. Sprinkle with the bacon and cheese. Drizzle with dressing and season to serve.
