Chicken Caesar salad with a twist

To make this dish at home by prescription from the author Gomer would need: 1 tbsp olive oil, 350g Coles RSPCA Approved Chicken Breast Fillet, 1/2 loaf Coles Bakery Pane Di Casa loaf, halved, cut into 1cm slices, Olive oil spray, 2 bacon rashers, coarsely chopped , 1 cos lettuce, outer leaves removed, 1 avocado, stoned, peeled, sliced, 2 tomatoes, sliced , 1/3 cup Coles Australian Shredded Tasty Cheese, 1/3 cup Caesar salad dressing.
Ingredients:
- 1 tbsp olive oil
- 350g Coles RSPCA Approved Chicken Breast Fillet
- 1/2 loaf Coles Bakery Pane Di Casa loaf, halved, cut into 1cm slices
- Olive oil spray
- 2 bacon rashers, coarsely chopped
- 1 cos lettuce, outer leaves removed
- 1 avocado, stoned, peeled, sliced
- 2 tomatoes, sliced
- 1/3 cup Coles Australian Shredded Tasty Cheese
- 1/3 cup Caesar salad dressing
Instructions
- Heat an oiled chargrill pan over medium-low heat. Cook the chicken for 5 mins each side or until cooked through. Transfer to a plate and cover to keep warm. Thinly slice.
- Spray the bread with oil spray. Cook on the chargrill pan for 1-2 mins each side or until toasted.
- Meanwhile, cook the bacon in a small frying pan over high heat, stirring, for 4 mins or until browned. Place on a plate lined with paper towel to drain.
- Arrange the lettuce, bread, chicken, avocado and tomato on serving plates. Sprinkle with the bacon and cheese. Drizzle with dressing and season to serve.
