Chargrilled watermelon and feta salad

This colourful summer salad combines the sweetness of ripe watermelon with the saltiness of feta to create a taste explosion in the mouth.

To make this dish at home by prescription from the author Gomer would need: 1 seedless watermelon, 2 tbsp Bertolli extra virgin olive oil, 1 tbsp red wine vinegar, 100g Hillwood Greek feta, 1/2 red onion, finely sliced , Freshly ground pepper, 16 Green Valley pitted, Kalamata olives , Watercress sprigs, to serve.

Ingredients:

  • 1 seedless watermelon 
  • 2 tbsp Bertolli extra virgin olive oil 
  • 1 tbsp red wine vinegar 
  • 100g Hillwood Greek feta 
  • 1/2 red onion, finely sliced 
  • Freshly ground pepper 
  • 16 Green Valley pitted 
  • Kalamata olives 
  • Watercress sprigs, to serve 

Instructions

  1. Cut the watermelon into 2cm thick slices and remove the rind. Mix the olive oil and red wine vinegar until well combined.
  2. Heat a chargrill pan over a medium-high heat. Chargrill the watermelon slices for about 30 seconds each side or until lightly charred. Divide among serving plates.
  3. Crumble over the feta and top with the red onion and olives. Drizzle with the dressing and season with pepper. Scatter with watercress to serve.
