To make this dish at home by prescription from the author Gomer would need: 1 1/2 cups SunRice brown rice & quinoa, 2 1/2 tbsp lime juice, 1 tbsp fish sauce, 1 tbsp caster sugar, 1 garlic clove, crushed , 2 carrots, cut into thin batons, 1/2 cup coarsely chopped cashews, toasted, 1 cup coriander leaves , 1/2 cup coarsely chopped mint, 2 green onion, thinly sliced.
Ingredients:
- 1 1/2 cups SunRice brown rice & quinoa
- 2 1/2 tbsp lime juice
- 1 tbsp fish sauce
- 1 tbsp caster sugar
- 1 garlic clove, crushed
- 2 carrots, cut into thin batons
- 1/2 cup coarsely chopped cashews, toasted
- 1 cup coriander leaves
- 1/2 cup coarsely chopped mint
- 2 green onion, thinly sliced
Instructions
- Cook the SunRice brown rice and quinoa following packet directions. Set aside to cool completely.
- Meanwhile, combine the lime juice, fish sauce, sugar and garlic in a jug. Stir until the sugar dissolves.
- Place the cooled rice, carrot, cashew, coriander, mint, onion and dressing in a large bowl. Toss to combine.
