To make this dish at home by prescription from the author Gomer would need: 1 1/2 cups SunRice brown rice & quinoa, 2 1/2 tbsp lime juice, 1 tbsp fish sauce, 1 tbsp caster sugar, 1 garlic clove, crushed , 2 carrots, cut into thin batons, 1/2 cup coarsely chopped cashews, toasted, 1 cup coriander leaves , 1/2 cup coarsely chopped mint, 2 green onion, thinly sliced.

Ingredients:

  • 1 1/2 cups SunRice brown rice & quinoa 
  • 2 1/2 tbsp lime juice 
  • 1 tbsp fish sauce 
  • 1 tbsp caster sugar 
  • 1 garlic clove, crushed 
  • 2 carrots, cut into thin batons 
  • 1/2 cup coarsely chopped cashews, toasted 
  • 1 cup coriander leaves 
  • 1/2 cup coarsely chopped mint 
  • 2 green onion, thinly sliced 

Instructions

  1. Cook the SunRice brown rice and quinoa following packet directions. Set aside to cool completely.
  2. Meanwhile, combine the lime juice, fish sauce, sugar and garlic in a jug. Stir until the sugar dissolves.
  3. Place the cooled rice, carrot, cashew, coriander, mint, onion and dressing in a large bowl. Toss to combine.
