Ingredients:

• 500g beef sausages 
• Olive oil spray 
• 600g chat potatoes, halved 
• 150g semi-dried tomatoes, chopped 
• 100g rocket leaves 
• 1 tbsp extra virgin olive oil 

Instructions

1. Preheat a non-stick frying pan over medium-high heat. Spray sausages with oil. Cook, turning occasionally, for 10 to 15 minutes or until cooked through. Set aside to cool slightly. Slice diagonally.
2. Cook potatoes in a large saucepan of boiling salted water for 10 minutes or until tender. Drain. Place into a bowl and allow to cool slightly.
3. Add tomatoes, sausages and rocket to potatoes. Drizzle with oil. Season with salt and pepper. Toss. Serve.
