Crispy pancetta adds saltiness and crunch to this tasty chicken salad.

To make this dish at home by prescription from the author Gomer would need: 1/4 cup olive oil, 3 tsp sherry vinegar, 1 tsp Dijon mustard, 4 small chicken breast fillets, trimmed, oil, for brushing , salt and cracked black pepper, 12 slices Primo Gourmet Selection Pancetta, 75g baby rocket , 2 tbsp semi dried tomatoes.

Ingredients:

  • 1/4 cup olive oil 
  • 3 tsp sherry vinegar 
  • 1 tsp Dijon mustard 
  • 4 small chicken breast fillets, trimmed 
  • oil, for brushing 
  • salt and cracked black pepper 
  • 12 slices Primo Gourmet Selection Pancetta 
  • 75g baby rocket 
  • 2 tbsp semi dried tomatoes 

Instructions

  1. To make the dressing whisk the oil, vinegar and mustard together. Set aside.
  2. Brush the chicken with oil and sprinkle with salt and pepper.
  3. Heat a non-stick frying pan over medium high heat. Cook the chicken for 4-5 minutes on each side or until golden and cooked through. Remove from the heat, cover and keep warm.
  4. While the chicken is resting, grill the pancetta until crisp and golden.
  5. To serve, slice the chicken into thick pieces and toss with the rocket, semi-dried tomatoes and dressing.
