Carrot and ginger salad

This flavoursome carrot salad is vegan friendly so that everyone can enjoy it.

To make this dish at home by prescription from the author Gomer would need: 2 tbsp sesame seeds, 3 medium organic carrots , peeled, cut into matchsticks, 85g fresh bean sprouts, washed, dried, 60ml fresh lemon juice, 1 tbsp peanut oil , 1 tbsp sesame oil, 3 tsp finely grated fresh organic ginger, 2 tsp brown sugar , Salt & freshly ground black pepper.
Ingredients:
- 2 tbsp sesame seeds
- 3 medium organic carrots , peeled, cut into matchsticks
- 85g fresh bean sprouts, washed, dried
- 60ml fresh lemon juice
- 1 tbsp peanut oil
- 1 tbsp sesame oil
- 3 tsp finely grated fresh organic ginger
- 2 tsp brown sugar
- Salt & freshly ground black pepper
Instructions
- Place sesame seeds in a non-stick frying pan over medium heat and cook, stirring, for 2-3 minutes or until lightly toasted. Remove from heat and set aside.
- To make the dressing, combine the lemon juice, peanut oil, sesame oil, ginger and sugar in a jug. Taste and season with salt and pepper.
- Place the toasted sesame seeds, carrot and bean sprouts in a medium bowl. Drizzle with the dressing and gently toss to combine. Divide salad among bowls and serve immediately.
