This flavoursome carrot salad is vegan friendly so that everyone can enjoy it.

To make this dish at home by prescription from the author Gomer would need: 2 tbsp sesame seeds, 3 medium organic carrots , peeled, cut into matchsticks, 85g fresh bean sprouts, washed, dried, 60ml fresh lemon juice, 1 tbsp peanut oil , 1 tbsp sesame oil, 3 tsp finely grated fresh organic ginger, 2 tsp brown sugar , Salt & freshly ground black pepper.

Ingredients:

  • 2 tbsp sesame seeds 
  • 3 medium organic carrots , peeled, cut into matchsticks 
  • 85g fresh bean sprouts, washed, dried 
  • 60ml fresh lemon juice 
  • 1 tbsp peanut oil 
  • 1 tbsp sesame oil 
  • 3 tsp finely grated fresh organic ginger 
  • 2 tsp brown sugar 
  • Salt & freshly ground black pepper 

Instructions

  1. Place sesame seeds in a non-stick frying pan over medium heat and cook, stirring, for 2-3 minutes or until lightly toasted. Remove from heat and set aside.
  2. To make the dressing, combine the lemon juice, peanut oil, sesame oil, ginger and sugar in a jug. Taste and season with salt and pepper.
  3. Place the toasted sesame seeds, carrot and bean sprouts in a medium bowl. Drizzle with the dressing and gently toss to combine. Divide salad among bowls and serve immediately.
